Chocolat Vegan Cheesecake

The Vegan Chocolate Cheesecake is perfect for nature lovers and animals who do not want to give up the pleasure of a cake full of flavor. Chocolate goes well with the light taste of coconut. The cashew nut serves only to thicken the mousse, rather than to give a taste to the dessert.
This is a cake really easy to prepare and quite cheap too. With some tips and the secret of our Chef, you can impress your friends.

Ingredients

For the biscuit

  • Pecan nuts 30gr
  • Cereals cornflakes 30gr
  • Coconut oil 1cuiller
  • Dates 60gr
  • Chopped almonds 40gr

For the mousse

  • Cashew 100gr
  • Coconut oil 40gr
  • Coconut cream 75gr
  • Agave 60gr
  • Cocoa powder 30gr

Instructions

For the biscuit

  1. Put coconut oil, pecan nuts and dates in a food processor with a blade.
    Mix well.
  2. Put the mix in a bowl and add the cereals and almonds. Keep the mixture aside.

For the mousse

  1. Put all the ingredients in the robot and mix well with a blade, until the mixture is very fine.
  2. Fill in the silicone molds of your choice and freeze for 30 mins.
    Me, in this recipe I used SilikoMart Stone 85 molds.

Dressing the dessert

  1. With our biscuit, form circles as wide as our cheesecakes with the help of a cookie cutter.
  2. Unmould the cheesecake and put them on a rack. Spray the desserts with a chocolate velvet ready for use.
  3. Serve the cheesecake on the biscuits with decorations of your choice. I added some chocolate chips here.

Notes

It is really important to spray the cakes very cold or frozen, for a better velvet effect.
If you do not want to spray your cakes, you can also choose to glaze them with black icing or another glaze of your choice.
